Schwartz review #16 : Chicken & Chorizo Gratin


I've just been telling you (here) about Schwartz's new range of Limited Edition Summer spice mixes that we were sent to review. The first recipe that we tried out was Chicken & Chorizo Gratin.


First of all I gathered up the ingredients - chicken, chorizo (no surprises so far !), yellow pepper, courgette, onion, a tin of tomatoes, grated cheese and a piece of stale baguette for making breadcrumbs. Oh, and the all important sachet of Chicken & Chorizo Gratin spice mix.


The first stage is gently frying the chicken along with the chorizo, so that it releases its lovely spicy oil in the pan to coat all the other ingredients and infuse them with flavour. You may notice I also did a smaller portion without chorizo for Juliette and Pierre to share because they don't like spicy food.


After setting the meat to one side, it's time to fry the vegetables.


Then add the tin of chopped tomatoes, spice mix and some water. Bring it to the boil and simmer for a few minutes to thicken.


Pour it over the chicken, mix it all up and put it into an ovenproof dish.


Top with a mixture of grated cheese and breadcrumbs.


And pop in the oven until the cheese is lovely and bubbly and melted.

Schwartz suggest serving this with crusty bread and a mixed salad.We served ours with rice and salad. It was really nice and is a great way of sneaking in vegetables if your kids are reluctant to eat their five a day. I opted for a mild chorizo and was actually disappointed because it lacked a bit of spiciness so next time (and there definitely will be a next time because everyone loved it), I'll go for a hotter one. The kids loved this even without the chorizo so don't be put off if you have spicy-food haters in your family. Maybe add some bacon pieces instead of the chorizo for them?

One 35g sachet contains enough for 4 servings (we got 5 servings and had enough for leftovers but I did almost double up on the quantity of chicken). Schwartz have calculated that one serving (following their recipe) contains 410 calories, but you could reduce that a bit by cutting down on the quantity of chorizo used and using low fat cheddar.

  1. This sounds yummy, and I love the combo of chorizo with chicken, chicken can be such a boring meat. Not normally a fan of packet mixes but i'd give this one a try!
